Olive oil is a liquid fat obtained from olives, a traditional tree crop of the Mediterranean Basin. Olive trees have been grown around the Mediterranean since the 8th millennium BC. Spain is the largest producer of olive oil, followed by Italy and Greece. The oil is produced by pressing whole olives. The composition of olive oil varies with the cultivar, altitude, time of harvest and extraction process.
Extra virgin is the highest quality and most expensive olive oil classification. It should have no defects and a flavor of fresh olives. It must be produced entirely by mechanical means without the use of any solvents, and under temperatures that will not degrade the oil. Extra Virgin Olive Oil is required to have no more than 0.8% free acidity and is considered to have favorable flavor characteristics and is dark in color and rich in flavor.
Culinary Uses: Salad Dressing, Pasta Dishes and Light Cooking.
Non-Culinary Uses: Olive oil is packed with anti-aging antioxidants and hydrating squalene, making it superb for hair, skin, and nails
