Teff “Ancient Grains” is a tiny seed produced from a species of love grass “Poaceae”. The Teff is a seed and not actually a grain, which is believed to have originated between 4000 BC and 1000 BC in Ethiopia and Eritrea, where it is grown and consumed today as a staple. Teff’s name is derived from the word for “lost” in the Ethiopian language, Amharic because the grain is so tiny that if it falls to the floor, it may never be found. 

Many of Ethiopia's famed distance runners credit teff for their endurance to this nutritional powerhouse of protein, fiber, and iron. Teff has long been an important element in the traditional diets on the Horn of Africa, where it's most commonly ground into flour and served as injera, the region's customary flatbread. 

Teff flour has a unique and mildly nutty flavour and adds moistness and nutrition to baked goods. Naturally gluten-free, teff flour is stone ground from fresh, whole grain teff. Substitute all or part teff flour in recipes for healthy and delicious pancakes, bread, and baked goods
