Quinoa Salad with Pineapple Ginger Dressing

Serves 10-12


1 pk Green Hills Organics Quinoa

5 tbsp. Green Hills Organics Grape Seed Oil

½ oz. parsley (chopped)

3 oz./ 1 onion (diced)

1 tsp. salt



4 oz. Pineapple (small dice)

½ oz. Candied Ginger (small dice)

½ tsp salt

½ tsp. pepper

2 tsp. white cane vinegar

2 tsp honey

2 tsp lecithin



  1. 2Place quinoa in water add salt and bring to a boil, decrease temperature and cook for 10-12 mins
  2. Drain excess water and leave to cool for 10 mins
  3. Add chopped onions.
  4. In a jar or bowl combine white vinegar, lecithin, salt, pepper, and grape seed oil. Whisk vigorously for 5 mins. Add pineapple and candied ginger as well as honey.
  5. Pour dressing into quinoa mixture, add parsley and toss
