Fenugreek seeds are mainly found in Middle Eastern cooking and are a popular ingredient in curries and chutneys. These dense, glossy seeds can be toasted before being ground fresh for use, or used whole in pickling blends or tea.

Fenugreek has a sweet, nutty flavor with an alluring maple aroma. It is primarily used in Turkish, Egyptian, and Middle Eastern cuisine, where it turns up in dishes from soup to bread.

Much like fennel, fenugreek has been grown for centuries because it was believed to have healing powers. An old Arabic greeting references the beneficial virtues of fenugreek: "May you tread in peace the soil where fenugreek grows." Cooks in India typically roast these seeds before grinding them to impart a sweeter flavor.

Fenugreek seeds are rich in protein and in some cultures both the leaves and seeds are consumed as a food. As a seasoning, the seeds are used whole or ground in a variety of ethnic cuisines.

Use fenugreek sparingly; too much can make a dish bitter.
