Gum Arabic, is a natural gum made of the hardened sap of two species of the acacia tree; Senegalia (Acacia) senegal and Vachellia (Acacia) seyal. Producers harvest the gum commercially from wild trees, mostly in Sudan, Senegal and Somalia—though it is historically cultivated in Arabia and West Asia. Food manufacturers often use it as a stabilizer in food and drinks that are designed to have a long shelf life, and the soft drink industry is one of the world’s largest consumers.*
This natural gum has been extensively tested for human consumption and is one of the safest to digest. Gum Arabic is a source of dietary fiber, it tends to make people feel full, and so they stop eating earlier than they otherwise would. This might lead to weight loss and reduced cholesterol levels. The gum has been used for medicinal purposes, to fight the symptoms of the common cold, treat eye problems, sore throats, stomach and intestinal pain*.
When used in baking, Gum Arabic can help cakes to rise and will also increase the natural fibre content of your cake. In bakeries you will find the gum widely sprayed on breads and pastries to give a glossy look and to help keep the moisture content increasing the product shelf life. Gums such as Xanthan, Irish Moss, Agar agar and Pectin are vegetable based thickeners (mostly soluble fibers), which are completely vegan.*
