Wheat flour is a powder made from the grinding of wheat grass (Triticum) that is grown in countless varieties worldwide. Green Hills Foods common whole wheat flour is 100% stone ground from dark northern hard red wheat, with all of the nutritious bran and germ still intact. There are different types of wheat flour, distinguished by the amount of gluten present. Wheat are called "soft" or "weak" if gluten content is low, and are called "hard" or "strong" if they have high gluten content. Bread wheat, or common wheat, is the primary species. Several other closely related species include durum, spelt, emmer, einkorn, and Khorasan wheat.
