Black strap molasses is the third boiling of the syrup derived from the sugar cane sugar. The molasses is dark in colour and is known for its robust flavour. The majority of sucrose from the original juice of the sugar cane has been crystallised and removed. The calorific content of blackstrap molasses is mostly due to the small remaining sugar. Unlike highly refined sugars, it contains significant amounts of vitamins –B6 and minerals, including calcium, magnesium and iron. One tablespoon provides up to 20% of the recommended daily value of each of those nutrients.
