Corn meal is made by grinding corn kernels into a fine powder. Unlike flour made from wheat grains, corn meal does not contain gluten, so it makes for a safe cooking ingredient for those suffering from celiac disease or gluten intolerance. Eating corn meal also offers other health benefits because it serves as a source of essential nutrients.
A 30 – gram tablespoon of cornmeal provides:
- 24 g of carbohydrate
- 2 g of protein
- 1 g of fiber
- 6 mg of iron
Cornmeal also contains small amounts (between 1 and 4 percent) of other essential nutrients like vitamins A and E. Cornmeal is used to create dishes like polenta, grits and various different types of baked goods
