This star-shaped spice is the dried fruit of a small Asian evergreen tree (a member of the magnolia family). Harvested when it’s still green and unripe, it’s dried in the sun, where it develops its red-brown color and a sweet warm flavor that’s reminiscent of licorice, clove and fennel seed (although it’s botanically unrelated to any of these spices).

In the culinary arts, anise (pronounced "ANN-iss") refers usually to the seeds of a plant with aromatic leaves and stems. While the leaves of the anise plant can be used as an herb, it's mainly the seeds that are used in cooking. Sometimes called aniseed, the seeds are used as a spice, either ground or whole. Aniseed is used in a various baked goods and desserts, for example, Italian biscotti, which is made with anise extract.*

Star anise is mainly used for culinary purposes in Chinese, Indian, Malaysian and Indonesian

The anti-bacterial and anti-fungal properties of star anise is also useful in the treatment of asthma, bronchitis and dry cough. For this reason, some cough mixtures contain star anise extract.*
